
- Basmati Rice (1 cup)
- Water (2 cups)
- Ghee or Butter or Oil (1 1/2 Tbs)
- StaPaneer (70gms)
- Green Peas (1/4 Cup)
- onion chopped (1)
- Carrots cut in long pieces (1/4 cups)
- Beans Chopped (1/4 cup)
- Bay leaves (2)
- Cardamoms (2)
- Ginger paste or grated (1/2 tsp)
- Garam Masala Powder (1/2 tsp)
- Jeera Powder (1/2 tsp)
- Chilli Powder (1 tsp)
- Cloves (2)
- Brown Coriander (1/2tsp)
- Salt (to taste)
- Saffron(optional) (2 strands)
- Green Coriander Chopped (small)
- Chopped and lightly fried nuts and raisens (1/3 cup)

- Wash & Soak Rice for ½ hrs and strain the water from it thoroughly.
- Heat ghee or oil in a large vessel. Add Cloves, Cinnamon, Cardamom, Bay leaf etc. Allow it to Splutter.
- Then add the Rice & fry on low flame until rice is crispy. This will take approx. 15 min.
- Once the Rice has been fried add 2 cups of water. Add salt and StaPaneer and cover with a lid. Cook on low heat until rice is done.
- In the meantime, heat oil / Ghee in a kadai. Lightly fry onion and ginger and add all the vegetables. Mix them well and stir fry a little.
- Then add red chilli powder, a little salt, coriander powder, garam masala powder & jeera powder & mix all together
- Add coriander & green chillies & Mix it along very well. Cover & cook. Do not add water
- Once the vegetables are a little soft (should not get too soft), mix the cooked rice and StaPaneer and transfer into a Casarole dish
- Top it with fried nuts and raisins and saffron and green coriander.
